Because I am more often in littered environments, I based my 'Custom' program on the default Jewelry mode so it relies on that Recovery Speed, and then I accept ALL of the Discrimination segments except the first two. That way I will hear all of the non-ferrous targets and a fair amount of ferrous-based junk, but the Low-Volume Iron range setting keeps things pleasant. And, by rejecting the first two segments, it eliminates the annoying false-response due to the incorrect GB behavior from the All Metal (full Disc. accept) search option using the 'Horseshoe' button.

Prob have better luck running the coin mode being it has the best separation. Thats the only one I ran. Jewelry and relic mode seemed way to slow even for my old park. I actually was able to pull a few deep coins with the 5x8 coil in the coin Mode. I guess just depends on what your after. Sounds like jewelry mode you shouldn't need to notch anything out like they did that for ya
I worked with all three factory default programs to get a 'feel' for what they could do for me in most places I would grab it. The Jewelry mode isn't that slow, but Relic mode is slower on recovery. Like you, I also pulled some deeper coins using the 5X8 DD coil. I was impressed with that coil and how the V-540 hunted, especially when I did a few side-by-side comparisons with an Equinox 800 w/6" DD and comparable settings.
I didn't reject any of the default 'Disc. notches' in the Jewelry mode. I simply
accepted All of the Disc. segments going lower
except the first two to eliminate the falsing caused by the poor default GB.

Speaking of eliminating false signals. I spent a lot of time running with and without iron bias on. I was getting the same false signals both ways and couldn't tell a difference one way or the other. I found good coins both ways. 2 different sites, one site was my old park and the other site was a old ghost town site filled with all kinds of junk and more mineralized ground. Was real hard to tell a difference. So being not much different I just ran it with iron bias off to make sure I was hearing everything.

It was mellower ground, or the grass was taller and you had more coil-to-dirt separation because the Vanquish GB is 'off' and falsing does occur. I haven't handled a V-540 that didn't have that issue.
There is no Iron Bias 'Off' on the V-540. It is on 'High' Iron-Bias when turned on, and pressing and holding the Horseshoe you can select 'Low' Iron-Bias or shift back to 'High.' Two Iron-Bias setting options, that's it.
I printed out the User Manual way back when I first got the Vanquish and have read it over many times. It explains some of the differences of the Tone ID behavior of the Jewelry mode as well.
