1.. Answer: The 7" size is what I class as a mid-size coil, and from past experience with that coil on an F5 I found it to work well for general-purpose urban Coin Hunting where there are moderate amounts of modern trash. It fits in and around most structures, and it is a Concentric design which provides me with better, more consistent VDI read-outs.
2.. Answer: I started with a standard 8" coil in March of '65 and they worked okay. In town, that is. But back in '68 coins were very, very plentiful and a smaller coil worked better to quickly find and isolate them for quick recovery.
Also, I started hunting places with a lot of dense trash and building rubble so a smaller-size coil worked quite well. I went to using a few smaller-size coils of about 5" to 6", and enjoyed them. Most good targets were not very deep, and I also hunted old locations with a lot of dense brush, such as campgrounds. Again, smaller coils worked great in the very dense brush.
In the summer of '83 we got our first, really good slow-motion, quick-response/fast-recovery detector that made it good for ghost town hunting. And with the amount of iron contaminated debris, smaller coils made the best choice.
So, since '68, I have favored smaller coils for most of my detecting, but do use a mid-size coil for places with modest targets.
3.. Answer: Very simple ... Because they work well for me and my needs. They have for decades and continue to do so for the sites I like to hunt.
